Food As Medicine: Healing Your Heart with Food

In this session, you will:

- Learn about the heart-healthy food plan.

- Learn how to create three simple and delicious dishes.

- How incorporating these foods into your daily meal planning can help you on your journey to a long and healthy life!

These are the dishes you will learn to prepare:

· SUCCULENT COCONUT CHICKEN WITH PURPLE RICE: Organic, pastured, tenderized chicken breasts sauteed in coconut oil onions, garlic and a blend of spices, served with a side of steaming hot purple rice.

· ROASTED DELICATA SQUASH WITH ROSEMARY AND MAPLE CREAM SAUCE: Bathed in coconut oil, fresh rosemary and Himalayan pink sea salt, this unique squash is roasted slowly in the oven and then drizzled with a maple coconut cream sauce for additional flavor. **

· DARK CHOCOLATE PEPPERMINT BARK: A deliciously decadent dessert made with organic dark chocolate, coconut milk, pomegranate seeds and just a small amount of peppermint extract for that one-of-a-kind flavor.

This class is for anyone with risk factors for developing or those already diagnosed with cardiovascular disease, diabetes, or metabolic syndrome (PCOS, low testosterone, etc).  The food plan focuses on addressing the symptoms associated with heart disease and/or metabolic syndrome, such as inflammation, insulin resistance and stress responses. We will show you how you can use healthy foods to treat these common underlying causes.

Kelly Sieberg is a graduate of the American College of Healthcare Sciences, is certified with the Functional Medicine Coaching Academy as a functional medicine coach, and is working towards her degree in nutrition from Arizona State University.

Can I register in person? 

Registration is limited to 12 people, and it is first come first served, no holds without payment. You may register in person at the Hodgson Mill Mercantile during business hours; we may also take a registration by phone - call 217-347-6455. 

What is the refund policy? 

Cancellation by the attendee may be made with a full refund within seven (7) days prior to the event. If cancellation is made within seven (7) days of class, registration may be transferred to another event, if available, or remitted as a gift card for Hodgson Mill Mercantile.

How many people will attend?

Minimum 5, Maximum 12. Class may be canceled for not meeting minimum attendance seven (7) days prior to the event; you will be contacted via phone/email and a full refund will be issued. Please share the class with interested friends and family so that we can be sure the event will go forward as scheduled!

Do I have to bring my printed ticket to the event?

No, but it may speed up your check-in.

Is my registration fee or ticket transferrable?

Yes. You can transfer to a different future event or transfer the ticket to a different attendee if you wish. Please confirm the change with us by calling 217-347-6455 and leave a message with the class date and time and the names; or emailing

Will I get to eat some of the food?

Yes! The dishes Kelly prepare will be available to taste by all attendees. (The amount you might get depends on the number of attendees, so don't count on it being a full meal.)

Will there be time for Q&A?

Absolutely! The last 10 minutes of the class is reserved for Q&A.

Is there a minimum age requirement?

Anyone under 16 must have a parent or guardian attend with them, and the adult must also purchase a ticket (up to 2 paid minors per paid adult chaperone.)

I see there are 2 sessions of this class, should I attend both?

The subject matter will be identical for both classes; you only need to attend one time (but feel free to attend both if you wish - new questions and answers will probably come up).
